Roast the Whole Cauliflower

Cauliflower is the new rice! With all these fad diets and no-carb this and gluten free that, what is a girl to do? As a foodie, I love to eat good food, but summer is around the corner, and I also want to watch my waistline. I often eat out and like to enjoy hefty portions and still manage to remain close to my desired weight.

So how do I do it? Cauliflower, for starters. I know, it sounds weird, but this tasty vegetable is a great substitute for many of my favorite meals. Want some Chinese style fried rice? Make it with crumbled up cauliflower and it tastes amazing! Want to make a potato and cheese casserole? Try cauliflower instead! How about some baked potatoes and butter and sour cream? Try taking the entire head of cauliflower and covering it in a spicy yogurt marinade and baking it (at high heat) for an amazing and tasty dish! When you take it out of the oven, it is a golden brown and is a dramatic presentation on a platter on the table. Try pairing it with salad and a glass of a white wine spritzer. I take my white wine and add mineral water and ice cubes, with a few raspberries and a twist of lemon for a refreshing drink that is lower in calories. Using white wine and lemon with a bit of olive oil and seasoning make a great salad dressing too. Another of my fav recipes is to take cauliflower florets and cover them with Panko bread crumbs and roast them in the oven for a healthy and crispy side dish. Sprinkle the top with Parmesan and your guest will ask for second helpings.

The ingredients you will need for this delicious roast the whole cauliflower recipe include vegetable oil, cauliflower, plain Greek yoghurt, lime zested and juiced, chile powder, garlic powder, curry powder, kosher, black pepper and cumin. To make this healthy recipe preheat the oven to 400 degrees Fahrenheit and lightly grease a small baking sheet with vegetable oil and set aside. Trim the base of the cauliflower to remove any green leaves and the woody stem. In a medium bowl, combine the yogurt with the lime zest and juice, chile powder, cumin, garlic powder, curry powder, salt and pepper. This roasted cauliflower makes a great side dish for your dinner.
