Fresh Blueberry Cheesecake with Homemade Crust

Here is an awesome recipe you can make in a pinch! This Fresh Blueberry Cheesecake with Homemade Crust looks so delicious and seems pretty easy to make I would think. Cheese cake is such a popular desert item and great for people who aren't the biggest fan of chocolate. I love my chocolate desserts, but will occasionally have a piece of cheese cake if it is made in house at a restaurant or bakery. Home made is ALWAYS better, in my opinion. Cheese cake is pretty old in fact, the recipe that is. Apparently it goes back to ancient Greece, it was very popular before the Roman conquest, when they took it on as one of their own recipes. Greek physician, Aegimus, is the first mentioned person in history to have been writing about cheese cakes. He actually even had a book about perfecting the art of cheese cake making.

The ancient cheese cakes and ones made in different countries differ quite a bit from the modern ones we know and love in North America. The ones in North America are cream cheese filled, and uncooked where as the cakes from Europe are cooked and have fruit in them apparently. In Italy, they make it with Ricotta cheese, and other versions like the ones in Germany, use quark, which is another form of cheese which tends to be soft and watery in consistency. The South African version is very similar to the British version and has a digestive cookie crust and sometimes they put Amarula liqueur in it as well, which would be really good!

Looking at the photos of this lovely Blueberry cheesecake with Homemade Crust recipe, reminds me of the Cherry Cheesecakes my mother used to make, right down to the glass pan she used, the only difference is this recipe uses fresh blueberries (which look so amazingly good), and a nice variation on the traditional graham cracker crust.

This blueberry cheesecake recipe has a nice nutty graham cracker crust recipe, that adds a couple of additional ingredients to make this cheesecake crust even tastier! For the yummy crust you will need graham cracker crumbs which you can crush even finer with a rolling pin or handy food processor. You will also need some good old fashioned rolled oats (you can use quick cooking oats as well), some ground walnuts or other nuts that you like (this adds a nice rich flavour and some additional healthy vitamins to the mix), some brown sugar and some melted butter/margarine.

It always amazes me at just how easy these crusts are to make, and how delicious they always turn out! To make this cheesecake crust recipe all you have to do is to combine all the ingredients and gently press into an 8 by 8 inch baking pan that has been coated with cooking spray. Then in a preheated 350 degree oven, bake the graham cracker crust for approximately 10 to 12 minutes. When the graham cracker crust recipe is finished baking, remove from the oven and let cool, that's it!
