Another Pecan Pie Cheesecake

The crust recipe for this cheesecake uses vanilla wafers, which are topped with a pecan pie recipe, followed by a cheesecake layer, for a rich and decadent combination. Wow! This pecan pie cheesecake recipe takes two of your favorite dessert recipes and combines them into one. Initially, it may seem like a lot of steps, but most of the steps are quick and easy to do. The ingredients you will need for the crust recipe include some vanilla wafer crumbs, brown sugar, and some melted unsalted butter. To make the cheesecake recipe crust start by lining the bottom of a 9-inch springform pan with some parchment paper and set aside. Then combine the vanilla wafer crumbs and brown sugar, and stir in some melted butter. Next press the crust recipe mixture evenly into the bottom of the springform pan and halfway up the side. Set aside in the refrigerator to set the crust while making the filling recipe.

For the pecan filling recipe, you will need some sugar, dark corn syrup, lightly beaten eggs, chopped pecans, and vanilla extract. To start the pecan filling recipe use a medium saucepan and combine some sugar, corn syrup, eggs, melted butter, pecans and vanilla and bring to a boil over medium-high heat, stirring constantly. Then reduce the heat and simmer constantly stirring until thickened, approximately 5 to 7 minutes. Pour the pecan filling into the prepared crust and set aside.The cream cheese recipe ingredients are softened cream cheese, brown sugar, all-purpose flour, eggs, heavy cream and vanilla extract. To make the cream cheese recipe start by preheating the oven to 350 degrees Fahrenheit. Beat the cream cheese until creamy, then add brown sugar and flour and beat until the mixture is fluffy. Add the eggs, one at a time, beating just until they are combined after each addition. Make sure not to overbeat. Then stir in the heavy cream and vanilla, and pour over the cheesecake mixture over pecan filling. Place the springform pan on a baking sheet, and put into the oven and reduce the heat to 325 degrees Fahrenheit. Bake the cake for approximately 60 to 70 minutes. A test to see if the cake is done is to use a toothpick inserted in the center and see if it comes out almost clean. Turn off the oven and leave the cheesecake in with the oven door closed for approximately one hour.Run a knife around the edges of the cheesecake but donít take out of the pan until completely the cheesecake is cooled.

The topping recipe ingredients include melted unsalted butter, some brown sugar, cinnamon, whipping cream and toasted chopped pecans. To make the topping recipe use a small saucepan and combine the butter and brown sugar. Cook for approximately three to five minutes or until very bubbly, then stir in the cinnamon, heavy whipping cream and chopped pecans. Cool to room temperature. The fun part is when you release the sides of the springform pan and spoon the topping over cooled cheesecake.
